I’ve been working on cleaning out my freezer since I’ll be leaving town for 2 weeks for the holidays! First stop, Dallas, second stop, Paris! Anyway, back to the freezer. I found a piece of flank steak in there and decided I’d make a nice steak salad for lunch this week. It’s one of those recipes that’s so simple, but seriously, so freaking good. Peppery steak and arugula matched up with creamy avocado and zingy balsamic? YUM! It’s also lighter than some of the other treats I’ve been indulging in this season. What’s your go to simple dish during the hectic holidays? I need a few more on my list!
STEAK & ARUGULA SALAD
Serves: 2 • Prep Time: 5 minutes • Cook Time: 8 minutes Nutrition per Serving Cal: 210.5 • Fat: 12.9 • Carb: 4.8g • Protein: 19.2g • Fiber: 2.7g • Sugar: 1.6g Ingredients
- 3 cups arugula
- 1 1/2 tsp toasted pine nuts
- 1/4 avocado, cubed
- 6oz. flank steak, sliced thinly (it’s good hot or cold!)
- 1/2 tsp olive oil
- 1 1/2 tsp balsamic vinegar
- S&P to taste
- Toss all ingredients besides steak into a bowl and toss.
- Serve with steak on top, simple!
